Church of the Highlands is 3 days into its annual 21 Days of Prayer & Fasting. It’s one of my favorite things our church does because they also have a 1hour service Monday – Friday at 6am + Saturday at 9am. Something about everyone gathering together for a brief message, quick worship, & intense prayer every day is incredible to witness & I am so thrilled to be apart of it.
Before 21 Days of Prayer & Fasting even began, the tribe sat around the table and shared what their plans for the fast was. Mine was, “fast for 3 days with only water, & the other 18 days do the Daniel Fast.” (in the Daniel Fast, you can only eat natural foods – i.e. veggies, fruits, nuts, etc.)
Going through 72+ hours with absolutely no food was grueling. But I am so glad I did it! It provided a perspective I had never experienced before & gave me a whole new appreciation for even the concept of “food.” haha 😛
All that to say, tonight, Amberlyn & I went to Wal-Mart & picked up a couple things to make our own salsa dip. It turned out so great, I wanted to share the recipe.

HOMEMADE SALSA (Daniel Fast [Daniel Diet] approved)
ingredients::
- 1 green bell pepper
- 1 yellow bell pepper
- 8 roma tomatoes
- 1 yellow onion
- 1 can of black beans (optional) – drained + rinsed
- cilantro
- 1 lime
- green onion (optional) not pictured
- spices – pepper, salt, garlic salt, & chili powder
step 1: chop the bell peppers
step 2: chop the tomatoes
step 3: pick desired amount of leaves off the cilantro stem & dice them
step 4: dice one half of the onion
step 5: cut the lime in half & squeeze 1 half of the lime into the bowl (only add the juice)
step 6 (optional): add 1 can of black beans – drained + rinsed
step 7: add a desired amount of salt, pepper, chili powder & garlic salt (I recommend taste testing before adding more!)
step 8: stir it all up. For the best flavor, store in fridge overnight.
step 9: EAT & ENJOY 😀
