chicken and sourdough dumplings soup recipe

A cozy, delicious and healthy soup that will definitely be added into your rotation.

Ingredients

  • 1 whole chicken (I used an uncooked whole chicken and boiled it)
  • 1 onion
  • 5 chicken bullion cubes
  • 2 cups diced carrots
  • 1 cupe diced celery

Instructions

  1. Boil whole chicken with onion, salt and pepper to flavor.
  2. Boil until chicken falls off the bone (OR cook in a crockpot all day). Remove from pot, let cool then separate meat from bones and skin.
  3. Set aside in a bowl.
  4. Add 5 bullion cubes to boiling water.

The Sourdough Dumplings recipe is from Farmhouse on Boone – I take no credit for the recipe but can attest to their deliciousness!

Ingredients

  • 1 1/4 cups all-purpose flour 
  • 3 teaspoons baking powder 
  • 2 teaspoons salt 
  • 1/4 cup butter, cut into chunks 
  • 1 cup sourdough discard 
  • 1 egg 
  • 1 tablespoon minced parsley

Instructions

  1. Combine flour, baking powder and salt into a large mixing bowl.
  2. Divide your cold butter into tablespoons and cut it into the flour mixture with a pastry cutter or fork. 
  3. Incorporate the sourdough starter, egg, and minced parsley. 
  4. Once your dough comes together, scoop about 1 tablespoon of dumpling dough out and form into a ball. Continue until you’ve made all your balls, about 25. 
  5. Drop each ball into a large pot of simmering soup one at a time, making sure they do not start sticking together. 
  6. Cover your soup pot and continue to simmer for about 15 minutes. The dumplings will begin to float to the top and expand.
