cilantro black bean corn salsa recipe

This recipe is a favorite within Tribe Shaver (Aaron’s family) & I’m excited to share it with you on the blog today. It’s easy to whip up and is perfect for parties, dinner with friends or just to munch on all week long.

Ingredients:

  • 2 drained 15oz cans of corn
  • 2 drained 15oz cans of black beans
  • 1 can of 14.5oz diced tomatoes
  • 1 bunch of finely chopped cilantro
  • 1 diced red pepper
  • 1tablespoon of minced garlic
  • 1/4 cup of lime juice
  • 1 avocado
  • 2tablespoons of olive oil

Instructions:

mix everything together. add avocados last and gently mix in. stick it in the fridge when not eating.

Pro Tip:

eat it with lime flavored tortilla chips, restuarnt tortilla chips or as a topping for a quesadilla.
