oatmeal chocolate chip (lactation) cookies

Would you believe me if I said this was my very first time making lactation cookies? Well, it was – and I am forever changed! haha

Seriously though, these cookies are so delish and easy to make.

Whether your nursing or not, the flax seed is so good for you – you’ll justify the fact that it’s a chocolate chip cookie and eat multiple a day (I do πŸ˜‰ ).

Ingredients:

  • 3 cups old fashioned oats
  • 1 1/2 cups all-purpose flour
  • 4 tbsp ground flax seeds
  •  1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 sticks of butter, softened
  • 1 1/4 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups chocolate chips (or a whole bag ;P )

Instructions:

  1. Preheat the oven to 350 degrees and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine oats, flour, flax seeds, baking powder, baking soda, cinnamon and salt.
  3. In another bowl, cream together the butter and sugars.
  4. Add eggs and vanilla.
  5. Add to the dry ingredients.
  6. Stir in the chocolate chips with a spatula until well distributed.
  7. Grab a spoon and place desired size of dough onto baking sheet.
  8. Bake for 8-10 minutes, until golden.
  9. Let cool on a wire rack and enjoy!
