I’ve been making sourdough since April 2022. I started using another bread recipe that was much more intense. Then I discovered this one, made some tweaks and have never looked back. It’s the one I send home with my friends when I hand them their own starter and they are just as obsessed with it as I am.

Ingredients ::
2 cups starter
2 1/2 cups water
4 tsp salt
8 cups flour
Instructions ::
Combine either with your hand or in a stand mixer with the dough hook.
Allow to rise overnight (8-10 hours).
Lightly flour your surface and divide the dough into two.
Fold / shape and put in banneton baskets or loaf pans.
Cover & allow them rise / double in size (this usually takes 1 hour).
Preheat cast iron dutch oven to 450 degrees.
Dump bread(s) from baskets to parchment paper and score as desired.
Place inside dutch ovens.
Bake wtih the lid on for 20 minutes and bake 25 minutes with no lid. Broil if desired for extra crispy top
*you can bake the other loaf at the same time or put it in the fridge until you need it
