thankful thursday #3

Hey friends! How are you doing? This has been such a odd week. I attended my church’s Freedom Conference over the weekend, so my Friday night / Saturday was booked, Sunday was full of church activities, Monday was a normal day, but Tuesday we had an ice-storm that shut down most of Birmingham (including my office) by lunch, and Wednesday was quieter but also busier because of all the people who elected to stay home because of icy roads. All in all, I’m still a little confused what day it is and am very tired.

But this week’s installment of Thankful Thursday is ready to go and I’m excited to share it with you! Don’t forget to share what you’re thankful for in the comments 😊

THANKFUL THURSDAY

  • Slow mornings

Like I said above, this week has been unusual, but I got to have two opportunities to have a slow, relaxed breakfast with Aaron which was a much needed change of pace. Tuesday I had a morning doctor appointment so I didn’t leave my house until 8am (contrary to my normal 6:50/7am departure). And even though I didn’t have anything scheduled Wednesday morning, we thought it best to wait a couple hours before I hit the roads just in case there were any reports of accidents due to ice that might cause me to stay home. With “clear roads” on the news, I decided to head to the office around 8:30am, which meant another morning of having a rush-free breakfast with Aaron.

When the weather lady says you’ll get frost-bite if you’re not dressed properly & outside for longer than 10 minutes, it makes you thankful for having a warm home to live in!

Y’all – favorite meal of the week award goes to this one right here! It was super easy, affordable, and delicious. And it fed all 3 of us + leftovers for me to take to work – hallelujah! I’ve linked the recipe with the name of the dish if you decide you want to give it a shot. Let me know what you think 😉
